Jenn's Bean Diaries #6



We murdered the unborn baby can of black beans.
Here's everything I made in one week.

In case you missed the murder, you can watch it here. I've been squirming about actually opening one of the cans and once I did, it filled me with both feelings of dread and that I was born for this. Is it shitty to say that I thrive in quarantine? Perhaps, I've been in a type of quarantine this whole time?

Day one

Finally, enough storage space and containers to put the damn thing away.

1 pint in the freezer
1 quart in the fridge
7.5 cups in a 4-quart Cambro in the fridge

Day two
  • 2 tablespoons black bean aquafaba mixed with two egg whites to make a pastel purple scramble with salmon, black pepper chevre, and scallion from Window Botanic Garden.
  • Two cups laid in a single layer to dehydrate for 6 hours at 115 degrees F. Many hiking and prepper blogs say that they will rehydrate faster this way.
Remaining
1 pint in the freezer
1 quart in the fridge
2 cups dehydrated
5.5 cups in a 4-quart Cambro in the fridge

Day three
  • 1/3 cup aquafaba went into not so vegan crepes
  • 1 cup warmed with cumin, calamansi, and oregano
Remaining
1 pint in the freezer
1 quart in the fridge
2 cups dehydrated
4.2 cups in a 4-quart Cambro in the fridge

Day four

  • 1 cup into no-tomato beef enchiladas, one to eat and the other to freeze
  • 3.2 cups blended with cream cheese (which I discovered does not freeze well), cinnamon, and chipotle to make a dip for tortilla chips
Remaining
1 pint in the freezer
1 quart in the fridge
2 cups dehydrated

Day five
  • 2 tablespoons aquafaba whipped into aioli
  • 1 cup beans sweetened with sugar and braised in soy sauce for kongjang
Remaining
1 pint in the freezer
3 cups in the fridge
2 cups dehydrated

Day six
  • Did not bean anew.
  • Still eating the kongjang on Wasa crackers and bean dip with tortilla chips.
Remaining
1 pint in the freezer
3 cups in the fridge
2 cups dehydrated

Day seven
  • 1 cup went to black bean chili, weighing in my mind if I should freeze half (I did).
  • I was able to clean out another small container and get it into the freezer!
Remaining
3 cups in the freezer
2 cups dehydrated

I ended up having to toss the rest of the aquafaba because it started to stink and the black bean dip had shoddy cream cheese that went off as well. I tried really hard to save them all, alas.
